Recipe: Turkey Joe with Mashed Potato Cups

Back Story: "The majority of us will have leftovers from our Thanksgiving dinners and instead of heating the leftover up,  I suggest turning them into 'new overs.'

This recipe uses leftover mashed potatoes and turkey. With the addition of some turkey bacon, some green onion and cheddar cheese and barbecue sauce, you have a twist on a sloppy joe with the kick a barbecue flavor. This is an easy kind of weekend night meal with your family and friends as you gather to watch a holiday movie.

Note: You can also  use leftover sweet potatoes but if they have any marshmallow on them, I would recommend removing that."

Ingredients:

  • Leftover mashed potatoes
  • Shredded Turkey or ground turkey
  • 4-5 Strips of turkey bacon, cooked and broken into small pieces
  • 1 Scallion, chopped including the green
  • 1/4 cup shredded cheddar cheese
  • 1/4 tsp cumin
  • Salt & pepper
  • 1 bottle Barbecue Sauce (I like Hickory flavor), reserve some for the end of dish

Directions:

  • Preheat the oven to 400 degrees.
  • In a large bowl, add the leftover potatoes, turkey bacon and scallion and combine well. Season with salt and pepper.
  • Spoon in half the potato mixture into the muffin pan and then using the back of a soup spoon, create a indentation in the center of each so the side go up the side of each muffin slot. 
  • Sprinkle a bit of cheddar cheese into the center of each mashed potato cup and then top with the remaining potato mixture. Pop the tray into the oven and bake for 25 to 30 minutes. You want to be able to run a small knife around the edge of each potato cup and have the edge pull slightly away from the edges.
  • Heat a dry sauce pan on medium-high heat. When hot, add roughly a tablespoon of olive oil and add your turkey, seasoning with salt and pepper. As it begins to brown, add your barbecue sauce to thoroughly coat and add the cumin. When heated through, lower to simmer to keep warm.
  • To plate, take one to two potato cups and spoon the turkey joe mixture on top and then drizzle a bit of the reserved barbecue sauce on top. Enjoy!
